A Tasty Little Recipe: Garlic Lemon Potato Smash

Garlic Lemon Parmesan Potato Smash

One of my goals for 2014 is to cook more, and so far I’ve managed to stay the course.  But I’ve found it’s quite easy to get stuck in a side dish rut.  Potatoes are my absolute favorite food group, so I decided to branch out from my usual mashed or oven fried variety.  The lemon, garlic (and parmesan!) give these potatoes a delicious flavor. I’ve served these to guests twice now, and they’re always a smash (pun intended)!

Try them out for yourself, and let me know what you think.

Ingredients

  • 2 pounds baby yukon gold potatoes
  • 3 cups chicken stock
  • Zest of 1 lemon cut into long strips
  • 2 cloves garlic
  • Extra virgin olive oil
  • 1/4 cup of grated parmesan cheese
  • 2 tablespoons chopped flat-leaf parsley
  • salt and pepper to taste

Directions

  1. Preheat oven to 400F.
  2. Place potatoes in a medium pot with chicken stock, lemon zest and garlic. Bring to a boil, cover and cook for 8 minutes.
  3. Drain potatoes, and set the lemon zest aside.
  4. Resist the temptation to slurp down the delicious lemon and garlic infused broth… or not.
  5. Line a cookie sheet with aluminum foil and coat generously with olive oil Oil. Use the base of a small saucepan or a large cup to gently flatten each potato. This step goes a lot more smoothly the softer your potatoes are at this point.
  6. Arrange the smashed potatoes on the oven tray with the reserved lemon zest and drizzle with olive oil. Roast for ~40 minutes, or until the potatoes are crispy and golden brown.
  7. Add salt and pepper to taste, and sprinkle with parmesan cheese and parsley before serving.

I’ve served this dish with a simple roast chicken and my to-die-for chicken parm meatballs, but you could really pair them with any main dish… or just eat a big ‘ol plate of potatoes on their own.

When there’s this much snow on the ground, all I want to do is curl up under the blankets and watch old Law & Order reruns on Netflix. But alas, I’m a busy city gal with obligations that force me to drag myself out of the house (even on weekends).  Since snuggling up in my pj’s wasn’t a viable option, I decided that leggings and cozy sweatshirt were the next best thing.

The leather paneling on my pants and the streamlined tunic length of my top helped keep me from looking like I was headed to the gym (at least that’s what I told myself). So I’d feel just as confident wearing this outfit to run errands as I would to have a brunch date with my husband.  To beat the chill I bundled up in a faux shearling jacket that’s toasty (but surprisingly lightweight) and a giant nubby scarf.

To all of my peeps in colder climates – how are you guys staying warm during the winter months?

Natural Beauty: Valentine’s Day Makeup Look w/ Walgreens

Full Disclosure: I am a member of the Collective Bias® Social Fabric® Community. This shop has been compensated as part of a social shopper amplification for Collective Bias and its advertiser.

Hey, peeps!

As I alluded to last week, I recently ventured down the Walgreens beauty aisle to pick up a few items for creating my Valentine’s Day look.  Check out my latest video for a few makeup tips and a step-by-step breakdown of how I get all glammed up for night out on the town.

And for those of you who don’t have time for the video, here’s a quick rundown of the Walgreens products I used.

First up was Garnier’s 5 Sec Blur skin primer.  I’d only used primer occasionally before, but I’m now a HUGE believer.  It glides on easily and instantly made my naturally oily skin feel smooth and soft.  You can use it with or without makeup for a more even skin tone.  Now, this stuff won’t perform miracles, but I did see a noticeable improvement in my pores and skin texture when I applied it.

This might be my new favorite mascara.  I mentioned in the video that Rimmel Scandaleyes is one-third the cost of my regular costs, but upon further investigation it’s more like one-fifth of the price (even better!).  In any case, I love the mod vibe this mascara gave me.  It lengthens and separates like a champ with NO CLUMPING!

When it comes to naturally rosy cheeks, maybe I was born with it, or maybe it’s Maybelline’s Master Hi-Light blush.  I’ll let you guys decide.  The color looks a lot lighter in the photos, but the #30 Coral I purchased is actually a much darker pink shade in person.  It has a subtle pearlescent sheen that I love and makes your skin glow when you put it on.

The beauty aisles at Walgreens are stocked with just about everything a gal could want. It took every ounce of willpower not to fill my basket with even more goodies!
