A Tasty Little Recipe: Sophisticated Ramen Noodles

rr1

Not gonna lie, Top Ramen was definitely a dietary staple during my college years. Back then, I used to think I was getting fancy if I sauteed a little diced onion and garlic to add to my broth. Ahhh, the more things change, the more they stay the same…

I was craving chicken noodle soup the other day, so I decided to try something with a little kick using some of the leftover roast chicken from the night before.  Enter my new grown-up ramen noodles recipe… which is tops indeed, if I do say so myself.

Queue the ingredients!

rr12INGREDIENTS

  • 1 tbs sesame oil
  • 3 tsp grated ginger
  • 4 cloves crushed garlic
  • 4 cups chicken stock
  • 4 cups water
  • 1 oz dried mushrooms
  • 2 packages ramen noodles (I used gluten-free rice noodles)
  • ½ cup chopped chives
  • 1 cup chopped spinach
  • 1 cup shredded carrots
  • leftover roast chicken or other protein (optional)
  • sriracha and soy sauce to taste
  • panko crumbs

INSTRUCTIONS

  1. Heat the sesame oil in a large skillet over medium-low heat and stir fry garlic and ginger for 2-3 minutes
  2. Add chicken stock and water, and bring to a boil
  3. Reduce heat, add dried mushrooms and simmer for 10 minutes
  4. In the mean time, toss panko bread crumbs with sesame oil and toast in the oven for 5 minutes at 350 degrees
  5. Add noodles, protein and vegetables to the broth and simmer for 5-10 minutes
  6. Add sriracha and soy sauce to season
  7. Spoon into bowls and top with panko crumbs before serving

Eric and I used to hop on the Fung Wah bus all of the time to take the $15 trip to Boston, but this time around we went out of our way to try some new things while we were in Massachusetts. We used Salem as our home base (hotel prices in Boston were insane because of the marathon), and I think it was one of the highlights of our trip. While Salem may be most widely known for the infamous witch trials and  other “supernatural” occurrences (a fact which they pander to immensely for the tourist crowd), the city also boasts a rich maritime history and the wonderful Peabody Essex Museum. We stayed at the Hawthorne Hotel which may or may not be haunted. Ghosts asides, the pancakes in the main dining room were out of this world, and I would gladly return for the breakfast alone.

We spent the day at the JFK Presidential Library and Museum before venturing into Boston for a stroll along Newbury Street and dinner at one of our favorite restaurants: Grotto. I’ve sung its praises before, but the garlic soup and spaghetti with meatballs will knock your socks off!

Closet Raid: My Outfits Lately…

instagramCollage

Hello Friends!

I’ve spent so much time playing catch up after my vacation that I haven’t had the chance to do a proper photo shoot.  To make up for it, I’ve been documenting my daily duds (Freudian slip, perhaps?) over on my Instagram feed.  Here’s a glimpse of how last week shaped up for me fashion-wise:

  1. I wore ruffles and stripes while spending the day heads-down, catching up on emails and prepping for upcoming client meetings and events.
  2. It’s been a while since I wore head-to-toe pink, so I made the most of the occasion with lace and bows.
  3. I wanted to look spiffy while hosting a joint marketing seminar with an old business colleague, so I opted for my new floral skirt from H&M, and of course another bow!
  4. Eric told me I should send these overalls back, but I disagreed and instead wore them for a day of chores and errands.
  5. I’d been saving this cocktail dress I picked up in Milan last Christmas (I’m so upset we don’t have this store in the States!), and finally got to wear it to Carnegie Hall for an impromptu trip to the symphony!

And there you have it folks: My personal fashion week summed up in 60 seconds!
