Exclusively for Everybody: Show Your Pride with a Punch!

Summer in NYC is finally here, and along with the heat also comes a bevy of outdoor activities and celebrations including one near and dear to my heart: the NYC Pridefest! For the past 8 years, I’ve attended this wonderful event and marched alongside and celebrated with my fellow New Yorkers (and visitors from all over) who look forward to a future without discrimination – one where all people have equal rights under the law. In my opinion, there’s nothing more beautiful than to see folks from all walks of life come together to support a great cause and have fun in the process.

In anticipation of this year’s Pride Week (June 23-25), I’ve partnered with Smirnoff, a company that has a longstanding relationship with the LGBT community. Cooking for 2: Chicken White Bean Chili w/ Crispy Tortillas

Before I got married, I used to live alone in a teeny, tiny apartment on the Upper East side, and my bathroom was literally inside of the kitchen. Needless to say, my crockpot was my best friend. I’d set it up on my drop-leaf table (in the living room!) before leaving for work, and chili was one one of my weekly go to recipes. Today I’m excited to share with you guys a more grown-up version of one of my favorite bachelorette meals… no crockpot required!

Ingredients

  • 1 poblano chile
  • 1 tomato
  • 1 yellow onion
  • 1 clove garlic
  • 1 cup white beans
  • 1/2 cup canned corn corn
  • 2 corn tortillas
  • 12 ounces ground chicken
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tsp chili powder
  • 1.5 cups chicken stock
  • ½ cup milk
  • ¼ cup shredded Cheddar cheese

Cooking for 2: Spicy Vietnamese-Style Fish w/ Rice Noodles

Last week, I shared with you guys my experience using Plated.com (you can check out my full review here and sign up to get two free plates here). Since then, I’ve enjoyed several different meals throughout the week, and this Vietnamese-Style fish is one of my favorites. My husband hates fish, so I don’t cook it very often. Luckily, I was working from home one day and got to make lunch just for myself.  This dish is so easy to prepare and packs a ton of flavor, and I hope you enjoy it as much as I do.
