A Sweet Little Recipe: Molten Lava Cakes

Sometimes I get a chocolate craving that’s so intense that only the most sinfully delicious of desserts will satisfy it.  Last weekend was one of those occasions, and I turned to a recipe that’s served me well time-and-time again for the past seven years.  Beware: should you choose to take on this recipe, prepare yourself for a decadent, moist, ooey-gooey, chocolate-y EXPLOSION!

Ingredients

  • 6oz dark chocolate bar
  • 5 tablespoons butter
  • 3 large eggs
  • 3 egg yolks
  • 1.5 cups confectioner’s sugar
  • 1/2 cup flour
Directions
  1. Preheat oven to 425 degrees
  2. Grease 6 (6-oz.) porcelain ramekins and set them aside on a baking sheet
  3. Heat the chocolate and butter in a large microwaveable bowl at 50% for ~2 min. or until the butter melts.
  4. Remove from microwave and stir with a whisk until the chocolate melts completely
  5. Mix in 1.5 cups sugar and flour
  6. Stir in whole eggs and yolks and beat until well blended
  7. Pour the mixture into the prepared ramekins and bake for 15 minutes or until the edges are done, but the middle remains soft and gooey (a toothpick or skewer might come in handy to test for doneness).
  8. Allow to stand for 1 minute before running a knife around the edge and removing from ramekins.
Additional Notes:
  • Be careful not to overcook!  They’ll still be delicious, but you won’t get the gooey chocolate center.
  • You could probably figure this out on your own, but this dish is absolutely divine with vanilla ice cream. (I made up a batch with my beloved homemade ice cream maker).
  • Whenever I serve these at dinner parties, I mix the batter and pour into the ramekins beforehand.  I then pop them into the oven just before the guests are ready to eat them.

I’ve been wanting a chunky gold chain for the longest but it seemed like all of the necklaces that caught my eye were upwards of $150.  While I am definitely a girl that likes to splurge every now and again, my inner cheapskate won out in this particular instance, and I was determined to create the look for less.  I stumbled upon a necklace at Forever 21 that I thought would satisfy my craving, but it looked rather puny when I tried it on.  But then I thought, why not get two and layer up those bad boys?!  That turned out to be the perfect solution.  And what’s even better is that I can also wear my new necklace as one long chain.  While wearing two necklaces is not technically a DIY project, I figured I could get at least a teensy bit of credit for using pliers to remove the extender links… right?

Contrary to what my blog posts may have you believe, I’m often quite the lazy dresser.  For instance, one of the main reasons I’m so fond of dresses is that they’re pretty fool-proof when it comes to outfit planning: just add a pair of heels and a few baubles, and you’re ready to go!  But now that the temps have cooled considerably around these parts, I’ve unofficially adopted an off-duty uniform of cozy oversized sweaters (the best ones are usually in the men’s department), paired with all manner of skinny bottoms (lean cords and riding breeches are both favorites as of late).  In fact, I’ve pretty much worn some version of this outfit 4 out of the past 7 days. To keep things interesting, I’ve been playing with different colors (including a  head-to-toe fire engine red look that I can’t wait to show you guys) and textures.

So indulge me, if you will… What’s your favorite go-to casual look these days?
