A Tasty Little Recipe: Slap Ya Mama (Homemade Potato Chips)

While I was down in New Orleans, I picked up various hot sauces (with names waaaayyyy too inappropriate to showcase on the blog), Cafe du Monde beignet mix, and of course… Slap Ya Mama seasoning (a spicy little blend of salt, red/black pepper, and garlic).  After my foray with homemade cheeze-its, I decided to try my hand at making my own potato chips.  These certainly did not disappoint.  I rarely keep junk food around the house, so these are a perfect solution for those times when I’m feeling a little peckish.  The prep is so simple that I hesitate to even call it a recipe, but I’ve included the steps below in case you decide to give them a whirl.

Tools/Ingredients

  • Russet potatoes (1 per desired servings)
  • 1/4-1/2  teaspoons Slap Ya Mama seasoning (or substitute your preferred seasoning blend)
  • Mandolin fruit/vegetable slicer
  • Microwave chip maker

Preparation:

  • Slice potatoes into thin, 1mm slices

  • Place slices on paper towel and blot to absorb excess moisture

  • Arrange slices in a single layer (with no overlap!) on a microwaveable chip maker, and lightly dust with seasoning

  • Microwave for 3 minutes
  • Remove, cool and enjoy!

Tips & Tricks

  • I tried slicing my first batch by hand, but they didn’t come our NEARLY as good as when I used the slicer. I purchased my trays and slicer separately, but you can get a complete kit here.
  • Thoroughly blotting with paper towel is CRUCIAL!  I forgot to do this once, and the chips didn’t come out nearly as crispy.
  • My chip maker came with two trays, and the instructions said that you could use two at the same time.  However, I got much better results using just one.

      I’ve also made them with just a bit of sea salt sprinkled on top, and they’re equally as tasty. Next, I wanna try a little rosemary.

    If you don’t have a microwave chip maker, they can also be baked to crispness. And a mandolin is definitely a must!
